The menus are inspired by classic world cuisines such as Mediterranean and traditional French cooking, interpreted in a lighter, more personal Nordic style, with touches of inspiration from Japan or the Middle East. All dishes are prepared using high-quality ingredients as their foundation, where elements such as olive oils, herbs, vegetables, and citrus play a central role in both flavor and texture.
Ingeberg’s Kitchen places great emphasis on organic produce and chooses local vegetables whenever possible, as well as sustainably caught or farmed fish and poultry when sourcing ingredients. Overall, the focus is on thoughtful cooking with a strong commitment to animal welfare.
Through our close and long-standing collaboration with Mogens Dahl Concert Hall, we ensure that our culinary offerings from early morning to late-night fare are tailored to each individual event or celebration, taking into account the season, theme, number of guests, and occasion.

The visual experience, presentation, flavor, and service of the food are an important part of any event or celebration. With us, the experienced Head Chef, Peter Ingeberg, leads the kitchen. Together with you and our event team, he creates menus tailored to the occasion, season, theme, and number of guests.
WHEN ONLY THE BEST IS GOOD ENOUGH
In addition to our long-standing partnership with Ingeberg’s Kitchen, we also work closely with other trusted suppliers. Among other things, we have our own specially developed Mogens Dahl coffee blend, serve local beer from Thisted, and carefully selected wines from Kjær & Sommerfeldt. Only the best is good enough, and we place great emphasis on quality, freshness, uniqueness, and organic produce when choosing our suppliers.
EXAMPLE OF MENU
Welcome: Crustades: freshly smoked fish with goma sauce and toasted sesame, hand-peeled shrimp with citrus and dill, North Sea cheese with toasted salted almonds.
Starter: Baked fillet of plaice, green beans, mousseline with white miso, rice vinegar, and herb salad.
Main course: Grilled breast of Rokkedahl organic chicken with cream of grilled pimentos, baked root vegetables with parsley and pickled lemon, crisp young greens, vinaigrette and wild cress, freshly baked organic sourdough bread.
Dessert: Organic lemon bavarois ice cream made with fresh lemons, vanilla cream, and crisp accompaniments.
